The Climb
Chinese influence runs through Jeremy Austin’s cooking as structure rather than ornament: a way of shaping local ingredients so they read clearly on the plate. The work stays grounded in place, but it leaves room for surprise through freshness and precision, with familiar forms adjusted rather than overwritten. George Brown College gave Jeremy Austin the technical base that the rest of the kitchen work builds on. The training shows in a style that values discipline and refinement without locking the food into place; there is control here, but not stiffness, and the cooking is allowed to move as long as the fundamentals hold. chef and co-owner of The Pine, where the job is as much about setting tone as executing dishes. The result is cooking that arrives polished and composed, but not fussed over.
Today
At The Pine and Crane Eatery, Jeremy Austin’s cooking sits in the balance between memory and method, with local ingredients and technical care carrying the menu rather than any need for theatrics. The restaurant’s center of gravity comes from that steadiness: a clear hand, a measured point of view, and dishes that know what they’re trying to do.
Signature
Jeremy Austin’s signature dishes include carrot jiaozi, dried fried string beans, and house-made basil bottini filled with smoked burrata. The dishes point to a kitchen working across contrast: the carrot jiaozi lean bright and nimble, the dried fried string beans bring a drier, more forceful savory register, and the basil bottini with smoked burrata pushes toward richness and softness. Together, they show a line of cooking that is playful in form but exact in execution.
In Their Words “That's what I would say really kind of drew me to cooking in general.” “The first job I ever had was in a kitchen.” Taken together, those lines describe a craft that took hold early and stayed. Kitchen work was the first setting, and cooking became the practice that followed from it: repetitive, demanding, and built on the discipline of showing up and doing the work cleanly.
