Coming Up
Jessica Rosval trained at ITHQ before moving into the kitchens of Osteria Francescana in Modena, Italy, where the standards around precision, discipline, and speed are non-negotiable. That foundation now reads across a career that has broadened in scope without losing its kitchen discipline. She is head chef of Al Gatto Verde (since 2023), co-founder and culinary director of Association for the Integration of Women (since 2020), and co-founder and culinary director of Roots Modena (since 2022). Taken together, those roles show a chef working across service, management, and institutional work. Rosval’s path has remained centered in Modena, where her work now spans daily kitchen leadership and the longer-term task of building organizations with staying power.
Where They Are Now
The current post places the work of running a kitchen at the center. For Rosval, that means a role shaped by years of prior service and by the pressure that comes with staying present in the room where decisions are made. The position is not presented as a title alone, but as active practice. Read on their own, the roles describe a chef whose present tense is anchored in Modena. The pattern is direct: leadership in the kitchen, leadership in the wider field, and a career assembled through consecutive responsibilities rather than a single defining move. Her practice moves between culinary direction and community-facing commitments, with the kitchen remaining the base and the broader programs extending outward from it.
Signature
Jessica's signature dishes include borlengo.
In Their Words “I am Jessica Rosval, I’ve been a chef for almost 20 years and I’m originally from Montreal, Canada.” The quotes keep the geography plain: Montreal as starting point, Italy as the place where the work settled. They also place Rosval’s own timeline in view, with nearly two decades in the profession and a move she did not set out to make. The result is a profile of a chef whose career took shape through practice rather than plan.
Honors
Jessica Rosval has received L'Espresso guides, Italy’s Best Female Chef (2023). Jessica's honors include Italy’s Best Female Chef (2023). That recognition sits within a career built through sustained kitchen work and leadership. In 2021, Italy’s Best Female Chef (2023) formalized what the roles already showed: Rosval had established herself in Modena through consistent responsibility, technical command, and a clear professional direction.
