    Jesús Salas Tornés is the chef and owner of Expendio de Maíz in Mexico City’s Roma neighborhood, where the restaurant was founded in April 2018. He is a culinary school graduate who worked for years in markets before opening the project, which focuses on nixtamalizing corn and a rural Mexican cooking philosophy. He is also identified as being from Ayutla de los Libres, Guerrero.
