Joanne Chang built her career by moving pastry work through restaurant kitchens and into bakery production, with Harvard College, management consulting, and a string of Boston and New York kitchens giving shape to the discipline behind it. At Flour Bakery & Café, which she founded in 2000, the work is defined by repetition, precision, and the kind of steady control that keeps a bakery running day after day.
The Path
Harvard College was the starting point for Joanne Chang’s formal education, but not for her kitchen training. Before food became the center of her work, she was a management consultant at Monitor Group in Cambridge, where the habits of analysis and structure came first. She then moved into kitchens as garde-manger cook at Biba in Boston and as pastry cook at Bentonwood Bakery in Newton, where pastry began to take hold as a craft rather than an interest. The restaurant pastry side of the trade followed. At Rialto restaurant in Cambridge (1995–1997), Chang worked as pastry chef in a setting where timing, consistency, and restraint carry equal weight. She then joined Payard Patisserie and Bistro in New York City (1997–1998) as cake department staff before returning to Boston as pastry chef at Mistral (1998–2000). Across those positions, the work was cumulative: dough, sugar, cream, chocolate, and cakes handled until technique became fluent. From 2000 on, Chang shifted that experience into ownership. As founder and owner of Flour Bakery (since 2000) and co-owner of Myers + Chang (since 2007), she has kept her career anchored in pastry while expanding into hospitality on a broader scale.

Flour Bakery & Café, founded in 2000, is built around the basic demands of bakery craft: dough that rises with control, frosting applied cleanly, baked goods leaving the oven at the right moment. As founding pastry chef, owner, and chef, Chang has kept the focus on clarity of execution rather than ornament. The result is a bakery identity grounded in repetition, flavor balance, and technical consistency. It puts dessert first without stripping away the work behind it. In Chang’s hands, sweetness is treated as structure: measured, usable, and made to carry comfort without losing precision. Her role as co-owner of Myers + Chang in Boston extends that same operational range. The combined work places her among the city’s better-known bakery and restaurant operators, but the center of gravity remains pastry: careful practice, consistent output, and a career built on making familiar things with discipline.

Joanne's signature dishes include sticky buns, kouign-amann, banana bread, midnight chocolate cake, and carrot cake.
