Joe Mercer Nairne is a London restaurateur and chef associated with Medlar in Chelsea and Cornus in Belgravia. Cornus’ official site names him, alongside David O’Connor, as one of the owners, and Medlar’s official site identifies him as the chef and co-owner of the Chelsea restaurant. A 2024 trade report on Cornus says Mercer Nairne continues to cook at Medlar while O’Connor moved over to Cornus.
