At Universitat Politècnica de València, the technical base was set for a career built on measurement, process, and repetition. Jorge Caus Pertegaz moved first into laboratory work at ANECOOP S. COOP as Técnico Laboratorio (1996–1997), where the job was rooted in analysis and the discipline of exact records. He later returned to ANECOOP S. COOP as Técnico de Vinos (1999–2003), shifting from lab routines into broader enological practice without losing the same attention to detail.

Harvest work came next with Técnico de vendimia at Ravenswood Winery (2003), a post defined by seasonal pressure and timing. That was followed by Director Técnico / gerente at All About Wines (2004–2006), where technical oversight and management sat in the same brief. The next step, Técnico Comercial Area Comunidad Valenciana y murcia at Enotecnia Grupo (2007), brought technical knowledge into commercial territory, before Responsable de Calidad at Bodega La Viña (2008–2009) placed quality control at the center of the work.

By the time Jorge Caus Pertegaz became Director Técnico - enólogo at Bodega La Viña in 2009, the role rested on a long sequence of technical, harvest, commercial, and quality positions that had already trained the eye for what holds a wine together.

Since 2009, Jorge Caus Pertegaz has served as Director Técnico - Enólogo at Bodega La Viña in La Font De La Figuera. The work joins winemaking with technical direction: cellar decisions, process control, and the wider responsibility of keeping the operation consistent from one stage to the next. It is a position shaped by accumulated practice rather than a single specialty, with each earlier role feeding into the next.
