At Universitat Politècnica de València, the technical base was set for a career built on measurement, process, and repetition. Jorge Caus Pertegaz moved first into laboratory work at ANECOOP S. COOP as Técnico Laboratorio (1996–1997), where the job was rooted in analysis and the discipline of exact records. He later returned to ANECOOP S. COOP as Técnico de Vinos (1999–2003), shifting from lab routines into broader enological practice without losing the same attention to detail. Harvest work came next with Técnico de vendimia at Ravenswood Winery (2003), a post defined by seasonal pressure and timing.
