Jorge Vera Gutiérrez is the chef of HENRY, the American steakhouse at Rosewood Hong Kong, where he took over in 2024. He previously served as Chef de Cuisine at Bayfare Social at Rosewood Hong Kong, and it describes his cooking as rooted in traditional Spanish tapas with a focus on sustainability. A 2024 Rosewood/Henry press release also says he honed his craft at DSTAgE and BiBo in Spain, and at Kødbyens Fiskebar and Aamanns in Copenhagen.
