José Carlos Fuentes has been executive chef of Club Allard in Madrid since 2018, and that post sits at the center of a career built across El Salvador, Catalonia, Murcia, Toledo, and Madrid. The throughline is technique: work shaped by movement, by precision, and by a consistent focus on ingredients that can carry a dish without excess handling.
The Climb
At LeBouquet culinary school in El Salvador, the craft started with fundamentals, before Fuentes moved into a career that accumulated scale through successive kitchens rather than shortcuts. He worked with Carme Ruscalleda at Sant Pau in Sant Pol de Mar (1999–2007), a period that placed him in a disciplined environment and helped define the working standards that followed. He then became chef executive at Sant Pau Tokyo (2004–2007), carrying that same exactness into a different service rhythm and a different market. The next appointments broadened the range of the work. Fuentes became head chef at Restaurante Palacete La Seda (2007–2010), then later took the role of chef at Tierra in Torrico, Toledo (2013–2017). Each position added responsibility and deepened the practical side of the craft: kitchen leadership, consistency, and the daily pressure of delivering at a high level. By 2018–2022, he was executive chef at Club Allard in Madrid, where his name became tied to the restaurant’s contemporary identity. He then moved into ownership and development as chef / founder at Don Dimas (from 2022) and chef / founder at Señor Pepe (until 2025), extending his work from one kitchen into the shape of concepts. Today, José is chef / founder of Barbudo (since 2025), continuing a career that has moved from training to authorship without losing its discipline.
