i. Biography
José Olivas is a Mexico City-born bartender and co-founder of Form + Matter in Roma Norte. He moved to Vancouver at eighteen, built a decade of international bar and restaurant experience, then returned to Mexico City and joined Handshake Speakeasy's creative development. After winning CANIRAC Mixologist of the Year in 2022, he created Form + Matter with David Rocha and Po Tsai as a technique-driven bar focused on creativity and hospitality.
