José Rausell

José Rausell is one of the brothers behind Rausell, the long-running Valencia restaurant/bar on Carrer d'Àngel Guimerà that the family says has been in operation for more than 70 years and is now run by the third generation. He is the "cabeza y corazón" of the venue, and he and his brother Miguel work with over 110 suppliers, including weekly sourcing trips to the Dénia fish market. Guia Repsol also identifies José and Miguel Rausell as the restaurant's principals and describes their approach as a philosophy centered on product quality.
