i. Biography
José Rausell is one of the brothers behind Rausell, the long-running Valencia restaurant/bar on Carrer d'Àngel Guimerà that the family says has been in operation for more than 70 years and is now run by the third generation. He is the "cabeza y corazón" of the venue, and he and his brother Miguel work with over 110 suppliers, including weekly sourcing trips to the Dénia fish market.
