“I started working in kitchens when I was fifteen,” JP McMahon says, and the line reads less like anecdote than a statement of entry into the trade. That early start set the terms for a career grounded in service, technique, and a clear view of Irish food as something local in origin and contemporary in execution.
The Climb
JP McMahon trained at University College Cork before beginning his career as a kitchen worker at Italian restaurant and then as a cook at Crawford Art Gallery Cafe in Cork. Those early steps trace the shape of a career built steadily rather than theatrically, moving from the fundamentals of kitchen life into a deeper command of ingredients and technique. Today, he is owner/chef/patron of Aniar, a role he has held since 2011, and culinary director of EatGalway Restaurant Group.
Today
At Aniar, the work is organized around place. Wild and foraged local ingredients are treated as starting material, not garnish, and the cooking stays close to season, texture, and memory. Traditional preservation methods such as curing, pickling, smoking, and fermenting are used as part of the restaurant’s vocabulary, giving the menu continuity without turning it into repetition. The tasting menu is the clearest expression of that approach: Irish food through the ages, filtered through a contemporary lens. For JP McMahon, the value of the format is structural. The menu does not treat older methods as display; it uses them as working tools in a present-tense kitchen.
Signature
JP's signature dishes include Guinness-Glazed Ham, Seafood-and-Seaweed Chowder, Salmon with New Potatoes, Spinach, Cider Cream, Fish Pie, and Dingle Pies. Taken together, they point to a kitchen working with familiar Irish reference points while keeping the finish controlled and direct.
