His route into spirits ran through the same organization, where coffee, startup work, and systems thinking fed the discipline of distilling. What could look like separate jobs instead reads as one training ground: Julian Giraldo learned to move between flavor and process, intuition and structure, ambition and patience.
The Climb
Early in his career, Julian Giraldo joined the organization and, from 2007, worked on the distillery startup while also overseeing the coffee side operation at Giant Texas Distillers in Houston, Texas. The dual role required flexibility and focus, asking for a builder’s eye and a steward’s attention to detail. Startup rhythms, the daily discipline of coffee, and the logic of systems thinking came together as a practical apprenticeship that shaped the way he would later approach spirits: methodically, but never mechanically. That foundation gave the work its range. Julian Giraldo moved with the business from the ground up, learning in real time and helping define its character from within. The result was not only technical fluency, but also a working understanding of how a distillery lives through consistency, judgment, and care. Today, Julian is Master Distiller of Giant Texas Distillers.
Today
The work is rooted in production, flavor, process, and the identity of Texas whiskey. In that frame, Julian’s role is both hands-on and guiding, tied to the daily realities of making spirit while also helping shape the voice of the house. Production sets the structure, flavor adds the nuance, process keeps everything aligned, and the identity of Texas whiskey supplies the larger context—a sense of place that runs through the work from beginning to finish.
