Kelly Kawachi is the head butcher at Blackbelly Market in Boulder, Colorado, where she oversees the restaurant’s whole-animal butchery and charcuterie program. She joined Blackbelly in 2016 after studying culinary arts at Colorado Mesa University, and later advanced to head butcher in 2021. She received the MICHELIN Guide Colorado Culinary Professional Award.
