Kelly Kawachi is the head butcher at Blackbelly Market in Boulder, Colorado, where she oversees the restaurant’s whole-animal butchery and charcuterie program. She joined Blackbelly in 2016 after studying culinary arts at Colorado Mesa University, and later advanced to head butcher in 2021.
