Koji Sawada is the chef/owner associated with Sushi Sawada in Ginza, Tokyo, an intimate Edomae sushi restaurant known for its very small counter seating and reservation-only format. Published dining coverage describes him as the chef behind the restaurant and notes that he trained in several sushi restaurants before opening Sushi Sawada in 2004. A separate Japanese restaurant listing in Osaka uses the name SAWADA, but no reliable evidence from the gathered sources connects that Osaka venue to this same person, so the identity anchor is matched only to the Ginza sushi chef.
