She grew up in Southern California, where bright light and marked seasonal shifts can make observation feel like a habit early on. In wine, that kind of attention matters. For Lauren Kopit, the field offered a place where patience, precision, and judgment all carry weight.
The Path
University of California, Davis in 2009 gave Lauren Kopit a technical base for the work that followed. From there, the craft moved out of the classroom and into harvest seasons and cellar shifts, where the pace is measured by fruit, tanks, and time. That sequence built the analytical side of the job and the practical side together. The early positions were laboratory-driven and seasonally exacting: a harvest laboratory position at Franciscan Winery, followed by another harvest laboratory position at Matchbook Winery. From there, Lauren Kopit moved into cellar work as a vintage cellar hand at Odette Estate Winery and then as a vintage cellar hand at Church Road Winery. Each role deepened the same core discipline: tracking details, staying organized under pressure, and learning how decisions made in the season echo into the glass. The progression is straightforward, and that is the point—repetition, rigor, and accumulation do the teaching. Leadership at Sterling Vineyards came in stages: first as Interim Assistant Winemaker, then as Assistant Winemaker at Sterling Vineyards from 2015, and ultimately as winemaker at Sterling Vineyards. That arc marks the shift from executing the work to directing it. The throughline stays technical and measured, with scientific attentiveness paired to creative judgment.
The Work Today
At Sterling Vineyards, Lauren Kopit’s work sits where timing, technique, and taste meet. Winemaking is often flattened into a romantic idea; the actual craft is more exact than that. It depends on reading conditions, measuring carefully, responding in sequence, and refining choices as the vintage develops. The work asks for dexterity in the cellar and discipline in the planning, with quality shaped by a team moving in sync.
