“Regardless of what everyone’s thoughts are, we are doing classical, regional Italian food and we’re not going to bend over to make this fit into what others might think a Rock Center restaurant should be.” The food is meant to stay close to an original idea: regional Italian cooking made lighter, brighter, and contemporary without losing its spine.
