The Philosophy For Patrão, Bairrada is not an abstract appellation; it is a region, material, and measure. His mission at the Poutena winery is to produce authentic DOC Bairrada wines, with the region’s historic terroir and indigenous varieties kept at the center of the work. That idea carries a practical demand: the farming has to match the claim. Viticulture at Vadio is certified organic, a credential that makes the philosophy visible before fermentation begins. It places the vineyard at the first point of meaning. The same attention to land runs through his Alentejo work. Patrão serves as Director of Oenology at Tapada de Coelheiros and as Director of enology and viticulture at Coelheiros, north of Évora, Portugal, roles that join winegrowing and winemaking rather than treating them as separate acts.

In Practice Patrão worked as a winemaker at Esporão in Alentejo, Portugal, in a chapter that ended in 2016. He also spent 13 years as winemaker for Herdade do Esporão, giving his career a long Alentejo span alongside the Bairrada project he owns and makes in Poutena. The geography matters without needing ornament. Bairrada gives him a DOC frame; Alentejo gives him estates where scale, vines, and landscape form another set of decisions. Between them, his work reads as a study in place: what a region gives, what a variety carries, and how wine can express its setting. His title at the Poutena winery is direct: owner and winemaker. The words are simple, but together they describe responsibility from intention to bottle, from the farming standard to the final expression of DOC Bairrada character.

In Their Words His own descriptions favor age, land, and the physical setting of vines. Speaking about an Alentejo estate, Patrão begins with time and scale: "The estate was started in 1467 so it is very old estate. It is one of the oldest estates in the Alentejo wine region. We have about 800 hectares of land. We are more or less based in the centre part of the Alentejo." The second detail narrows the frame from total acreage to the vineyard itself: "Of the 800 hectares of land we have about 50 hectares of vines completely surrounded by cork forest." The phrasing is plain, almost topographical, yet it reveals an emphasis on a specific arrangement of land, history, vines, and surrounding life.
