Mariano Ramón is the chef, creator, and owner of Gran Dabbang in Buenos Aires, a restaurant he opened in 2014 and has kept as a highly influential, long-running presence on the city’s dining scene. He is a cook who trained early with Francis Mallmann and Narda Lepes, then traveled widely through Asia and other regions before returning to Argentina to build Gran Dabbang’s India, Thai, and Arab-influenced menu with local ingredients.
