Mario Payán is the chef and creator of Kappo, a Japanese restaurant in Madrid that opened in August 2016 on Calle Bretón de los Herreros in Chamberí. Mario prepared each dish live at the counter and brought the purity of kappo cuisine to Madrid after experiencing it firsthand in Japan.
