Formal training set the base at Runshaw College; subsequent work in professional kitchens tested that base against regional produce, service discipline, and the responsibility of cooking from a defined place.
The Climb
The modern British register that Mark Birchall now works in was built through technical progression in Cumbria, England, at L’Enclume: first as sous-chef (2006–2008), then as head chef (2008–2014). The next step was organizational rather than purely station-based, with Birchall taking the role of group executive chef of Northern Operations at Umbel Restaurant Group (2014–2015). The current practice is divided between Moor Hall Restaurant with Rooms, where Birchall has been Chef Patron since 2017, and The Barn at Moor Hall, where he is also Chef Patron.
Current Practice
Modern British cooking at the restaurant is tied to what can be grown, made, and sourced from the five-acre grounds wherever possible. The kitchen garden supplies many ingredients, and Michelin described the technique as hugely impressive, with flavour judgement that balances simplicity and complexity. Sourcing is treated as a craft decision, not a slogan. Birchall starts with high-quality produce, gives priority to nearby suppliers, and works with organic producers and ethically and sustainably sourced ingredients. His own framing is direct: “For me, it’s more about responsibility than sustainability.” That responsibility is visible in the handling of fish, vegetables, and sauces. Cornish turbot cooked in brown butter with garden courgette, shrimp and nasturtium sauce uses courgettes and courgette flowers grown on-site. Michelin inspectors also singled out another turbot preparation, cooked in brown butter with seasonal kuri squash and Mylor prawns, describing it as classically based. Signature work at the main house is defined by repetition, refinement, and attachment to the site’s repertoire. Birchall identifies Paris Market Carrots with Doddington, Chrysanthemum and Sea Buckthorn, and Gaisgill Farm Galloway Beef with barbecued Pablo Beetroot, Mustard and Shallot, as dishes developed and evolved over years: “What I would call my signature dishes are both the carrot dish and the beef. Those are recipes I’ve developed and evolved over the years.”
