Martín Rebaudino is the founder of Roux in Recoleta, Buenos Aires. Martín is the founder and on reputable dining guides as the chef leading the kitchen. He was born in La Cumbre, Córdoba, into a family of cooks, and after training in Europe he worked at Oviedo in Buenos Aires for many years before opening Roux in 2014. Roux’s cuisine is contemporary with French, Spanish, and Argentinian influences, with a strong emphasis on seafood and seasonal produce.
