London-born Mary Wilson is co-founder, co-owner and farm director of Wilsons in Bristol. She opened the restaurant with Jan Ostle in 2016 and directs Wilsons Market Garden, applying her training in biodynamic agriculture to the restaurant's farm-to-table program.
