i. Biography
Mary Wilson is the co-founder of Wilsons in Redland, Bristol, which she opened in 2016 with Jan Ostle and built around produce from their own market garden. She grew up in her family restaurant in West London, trained in biodynamic agriculture, and oversees the restaurant's growing operation and farm-to-table sourcing. Wilsons has been recognized by Michelin and the National Restaurant Awards for its hyper-seasonal, regenerative approach to dining.
