Jan Ostle is the chef and co-founder of Wilsons in Redland, Bristol, which he opened in 2016 with Mary Wilson. Wilsons is described as a small, independently owned farm-to-table restaurant, and Ostle runs the kitchen while the restaurant’s produce-led model is shaped by the couple’s partnership. He has also been identified as chef-owner/chef-co-owner of Wilsons in Bristol, and the restaurant received a Michelin Green Star in 2022 and a Michelin star in the 2025 guide.
