Mathieu Pérou is the chef-proprietor of Le Manoir de la Régate, a Michelin-starred and Green-starred restaurant located along the Erdre River in Nantes, France. After training at Lycée Nicolas Appert and working under chefs such as Thierry Drapeau, Tetsuya Wakuda, Peter Gilmore, and Corey Lee, he took over the family restaurant's kitchen in 2017. He is celebrated for his hyper-local, permaculture-driven approach, cooking exclusively with local freshwater fish and regional Loire Valley produce.
