Since 2017, her direction in the cellar has been guided by purity and texture. “We continue to destem everything in the harvest, as we want to maintain the purity of the berries,” Mathilde Grivot says, and the line captures a method that keeps the fruit clear in the final wine. The other priority is tannin management: “We’ve worked on the suavity of the tannins since my brother and I came to join our father.” The aim is not weight for its own sake, but finesse—smoothing structure without flattening character.
