Matthieu Derible

Matthieu Derible is the chef at Le Art, the gastronomic restaurant at Château de la Gaude in Aix-en-Provence, where the official site says he has led the kitchen since 2021 and creates a seasonal, refined cuisine rooted in terroir and French tradition. A 2026 profile in Gault&Millau states that he joined Château de la Gaude in 2019, was named chef de cuisine in 2021, and later took over the restaurant’s kitchen after Matthieu Dupuis-Baumal’s departure. Coverage from Le Chef and other industry press also notes that he helped build Le Art’s identity from the restaurant’s early development and that the venue held a Michelin star.
