Matthieu Hervé is the executive chef at Château de Montcaud in Sabran, Occitanie, where he has headed the kitchens since 2018. He oversees Le Cèdre de Montcaud, the château’s gastronomic restaurant, which earned its first Michelin star in 2024. The château describes his cooking as combining the clarity and freshness of his native Normandy with the sunlit flavors of Provence.
