Before Melissa Perello opened Frances in San Francisco, the work had already been shaped in kitchens that prize tempo, discipline, and consistency. The Culinary Institute of America in Hyde Park gave the technical base; San Francisco gave the style its outline. The Path
Melissa Perello began in a kitchen-based job at a local country club, an early lesson in the cadence and demands of professional service. An apprenticeship at Aqua followed, then work as chef under Michael Mina at Aqua in San Francisco, where speed, exactness, and coordination were part of the daily grammar of the kitchen. Those stages established the structure behind her technique and her working sense of how sourcing, service, and flavor have to align. At Charles Nob Hill in San Francisco, Melissa Perello moved from chef to executive chef, a shift that marked expanding responsibility as well as a broader view of the restaurant floor.
