Michael Cimarusti is co-owner and executive chef of Providence in Los Angeles. A Culinary Institute of America graduate whose earlier kitchens included Spago, Le Cirque and Water Grill, he opened Providence with Donato Poto in 2005 and built its seafood cooking around wild-caught sourcing, seasonality and marine stewardship.
