i. Biography
Mike Fadem grew up in St. Louis, Missouri, with restaurant work and restaurant culture taking root early enough to read less like a phase than an apprenticeship in taste. Italian food set the terms of that pull: pasta, pizza, and the steady appeal of a cuisine whose basics reward repetition, heat, and timing. Seeing *The Godfather* when he was 8 years old gave that interest a picture to attach itself to, and from there, pasta and pizza became the whole field of desire. Over time, that fixation became a working frame for Mike Fadem’s practice—one built around service, dough, sauce, and the durable pull of Italian food and culture.
Coming Up
Chef/owner is the position that best describes the scope of Mike Fadem’s work at Ops: authorship, oversight, and the responsibility of shaping a restaurant from the inside. The role places him at the point where concept meets execution, and it fits a career organized around the restaurant as a site of craft, memory, and exchange.
Signature
Juno is one of Mike’s signature dishes, and it sits comfortably within the terms of his kitchen: familiar Italian reference points, handled with enough precision to register as more than homage. The dish reflects a cook working from an early attachment to pasta and pizza toward a more defined expression of his own, where taste, memory, and repeatability all have a place.
In Their Words “The best part of this is getting to make a dish with a chef from another restaurant. We've been learning so much from the exercise.” For Mike Fadem, collaboration functions as a working method, not a side note. Making a dish with another chef turns the kitchen into a shared workshop, where technique is tested in real time and knowledge moves in both directions. “I've been obsessed with food and restaurants my whole life. I fell in love with Italian food and culture after seeing The Godfather when I was 8 years old. From there, pasta and pizza were all I wanted to eat.” The quote is direct about its subject: appetite, repetition, and the way an early image can lock onto a cuisine and stay there. In Mike Fadem’s case, that pull toward Italian food and culture became a durable point of reference, with pasta and pizza as the basic forms through which that interest took shape.
Honors
The collaboration quote also marks a practical habit in Mike Fadem’s work: learning by making alongside other cooks. Even as chef/owner of Ops, he treats exchange as part of the craft itself, using the act of cooking with another restaurant’s chef as a way to sharpen technique and keep the work open to outside influence.
