Nicolas Conraux is the chef and co-owner of La Butte in Plouider, Brittany, where he leads La Table de La Butte, the gastronomic restaurant at the family house. He arrived at La Butte in 1999, worked through service and kitchen roles, and became chef after replacing his father-in-law; the restaurant earned its Michelin star in 2014 and a Green Star in 2022 for ethical and environmental values.
