Technical training began at Wine-making high school in Beaune, where the first foundations of cellar practice were put in place. He then worked as winemaker at Rossignol-Jeanniard in Volnay (1994–1997), a period that placed him in the daily pace of vineyard and cellar work. Each post added another working context, with different estates, terroirs, and cellar habits contributing to the same grounded Burgundian base. That line of work led to Domaine Nicolas Rossignol, where he has been founder and winemaker since 1997. The role marks continuity as much as independence: a domaine under his name, but still held in the same wine region that shaped the rest of the record.

The Work Today

Since 1997, Rossignol has continued as winemaker at Domaine Nicolas Rossignol in Volnay, keeping the work tied to the rhythms of a long-running cellar practice. He also works as winemaker at Domaine Rossignol-Trapet in Gevrey-Chambertin, which keeps him active across two Burgundy addresses. His own description of the method is direct: “I work inspired by the lunar calendar.” The line points to a practice organized around timing, cycles, and attention to seasonal signals.

Signature

Among Nicolas’s signature wines are Gevrey-Chambertin Vieilles-Vignes, Beaune 1er Teurons, Gevrey-Chambertin 1er Cherbaudes, Petite Chapelle, and Latricières.
