i. Biography
Pablo Donadío Falcón is a Spanish chef and cook at the three-Michelin-starred restaurant Hiša Franko in Kobarid, Slovenia. Educated at the Basque Culinary Center, his culinary path includes experience in international kitchens such as Inua, Trivio, Noma, The French Laundry, and Quintonil. In November 2024, mentored by Hiša Franko head chef Yvonne Melee Simon, he won the South-East Europe & Mediterranean Regional Final of the S.Pellegrino Young Chef Academy Competition with his dish 'Haiku to the Mountain', advancing to the 2025 Grand Finale in Milan.
