    In Kobarid, Slovenia, the raw material sets the terms: trout, deer, goat, forest fruits and wild plants, carried into the kitchen through foragers, shepherds, cheesemakers, hunters and fishermen. At Hiša Franko, Ana Roš works inside that supply line, building seasonal and regional cooking that can place familiar local ingredients in unexpected combinations.

    Kitchen formation here did not start with a conventional chef-school biography. After University of Trieste, Ana Roš worked as a server at Hiša Franko in Kobarid, Slovenia, until 2002. In 2002, the work shifted into the kitchen, where she became chef / head of kitchen of Hiša Franko. The practice has since widened beyond the restaurant through Pekarna Ana, founded in 2022, and Jaz, founded in 2023.
