i. Biography
Pascaline Lepeltier holds the title of Meilleur Ouvrier de France in Sommellerie, a recognition tied to technical command, service judgment, and disciplined wine work. Her roles across France, Belgium, and New York show a practice built around restaurant service, list direction, and wine education. “All my work right now has been aimed at this competition, but it’s really work that’s geared toward rethinking wine tasting overall: to push it toward a kind of mindfulness, to turn that mirror toward yourself.” Pascaline has said.
The Path
Formal study gave the wine practice its first structure: Nantes University in 2001, followed by CFA in Angers, France, in 2005. Restaurant-floor training followed through Pascaline Lepeltier’s work as Assistant Sommelier at L'Auberge Bretonne in La Roche-Bernard, France. Beverage direction then moved the work into list-building and program management at Rouge Tomate in Brussels, Belgium, before the New York City tenure at Rouge Tomate from 2009 to 2017. The independent operator’s role entered the record in 2018, when Lepeltier became a Founding Partner at Racines NY. Since 2022, the work has continued through Chambers, where she is co-owner and Wine Adviser.
The Current Chapter
A contemporary wine program at Chambers in TriBeCa, New York City, is organized around a 2000+ Wine List with emphasis on organic, biodynamic, and natural wines.
