Paulraj Karuppasamy

Paulraj Karuppasamy is the executive chef and co-owner of Paper Dosa, a South Indian restaurant based in Santa Fe, New Mexico. Born in Tamil Nadu, India, he completed formal training in hotel management and culinary arts before working for a decade at Dosa in San Francisco. In 2015, alongside his wife Nellie Tischler, he opened Paper Dosa's permanent location, serving traditional fermented dosas and uttapams incorporating seasonal local produce.
