Where They Are Now

At Hímesudvar in Tokaj, the winery runs on two recurring pressures: grapes and wine tourism. Péter Várhelyi works inside that cycle, where harvest concentrates attention on the vineyard and visitor traffic adds another layer of pace to the estate. “The workings of our winery are defined by the cyclic nature of both the grapes and the wine tourism.” That cycle also shapes how the team assigns labor through the year. Work, energy, and planning have to be adjusted around seasonal load rather than held to a fixed routine. “We’ve done our best to align our workflow, moments, energy and ourselves as well with these two major pillars of circumstance.” Within that frame, the craft is about staying responsive to what Tokaj asks in each season, while keeping the work connected to the larger rhythm of the winery.

Signature

Péter Várhelyi’s signature wines include Tokaji Aszú 6 puttonyos 2023 and Hímesudvar Tokaji Furmint 2017. Taken together, they show his work across Tokaji wines: one rooted in a formal regional category, the other tied directly to Hímesudvar and its place in Tokaj.
