i. Biography
Phil Marchant is the owner and executive chef of ESSA in Fortitude Valley, Brisbane, where the restaurant opened in 2021 on Robertson Street just off James Street. He is a former head chef at Gauge and note that he trained at London’s Pied à Terre before leading ESSA’s produce-led, wood-fired cooking style.
