Pierre Négrevergne

Pierre Négrevergne is the chef and co-owner/operator of Auberge Pyrénées Cévennes in Paris’s 11th arrondissement, a historic bistrot on rue de la Folie-Méricourt. He took over the house in 2018-2019 after 14 years leading La Terrasse Mirabeau in Paris’s 16th arrondissement, then kept the restaurant’s classic bistro staples such as blanquette de veau and cassoulet while presenting a more generous, traditional style of cooking. He is the chef flourishing in the over-100-year-old house, which was temporarily closed for renovations in 2026.
