i. Biography
Pietro Collina is the Bar Director at Viajante87 in Notting Hill, London, where he joined the relaunch of the venue in September 2023 and helped shape its Latin American-inspired cocktail program. Prior to Viajante87, he led bar programs at Eleven Madison Park and The NoMad in New York, Los Angeles, and London, and later worked across Thesleff Group venues including Los Mochis and Sale e Pepe as beverage director.
