The Path
Training at the Culinary Institute of America gave Rachel Yang the technical base for a kitchen practice built on control, repetition, and precision. That foundation carried into the line at the restaurant run by Alain Ducasse at Essex House in New York City, where professional pace and standards sharpened the work. From there, the career moved through roles that prepared Rachel Yang for ownership, with each step adding range without loosening discipline. Korean influence became the clearest thread in that progression. Rather than treating tradition as reference material, Rachel Yang used it as structure, then pushed against it with a more personal register. The result is cooking that reads as composed rather than decorative: direct, exacting, and willing to let memory and surprise sit in the same bowl. Today, Rachel Yang is chef and owner of Joule (since 2007), chef and owner of Revel (since 2010), and chef and owner of Paper Cake Shop. Those names mark separate rooms in the same practice, each extending her point of view across Seattle while keeping Korean-influenced cuisine at the center.
