Ricardo Señorán is the owner and chef of Farragua, a restaurant in Gijón, Asturias, where he leads a cuisine rooted in seasonal local product and a modernized traditional approach with strong Extremaduran influences. He has worked in kitchens including Peix & Brases, Marqués de Riscal, La Salgar, and DiverXO before opening Farragua in Gijón.
