Rolando Hilbing’s technical base came through University of Geisenheim, where he completed a Master in Viticulture and Oenology in Germany in 1978. That training gives his work its framework: discipline around raw material, attention to structure, and a working familiarity with how fermentation and distillation each shape flavor in different ways. At Hilbing Franke Distillery in Luján de Cuyo, Argentina, that background is expressed in a still-house approach that favors precision over noise.

Where They Are Now

The current distillery line includes ANIAPA CABERNET S. GRAPPA, Hilbing - Gin Old Tom - 750 Ml, and Hilbing - Gin London Dry - 750 Ml. Read together, those names map the scope of the work: grape spirit on one side, gin on the other, with the same measured hand moving across both. On drinking culture, Hilbing has said, "Today cocktails have evolved a lot over time in different parts of the world as well as in our country, and that has made it possible to drink differently." It is a clear read on an industry where service and consumption continue to shift.

Rolando Hilbing’s signature wines include Aniapa Grappa, ANIAPA CABERNET S. GRAPPA, Hilbing - Gin Old Tom - 750 Ml, and Hilbing - Gin London Dry - 750 Ml. The range points to a distiller working between grape-based spirit and gin, with each label carrying a different part of the same methodical outlook. What holds the line across them is restraint: flavor built with control, and form kept clean.
