Ruben Rolon is an Argentine-born mixologist and the Bar Director and partner at Bar Colette in Dallas, Texas. He previously served as head bartender for The Bastion Collection's L'Atelier de Joël Robuchon and Le Jardinier in Miami, where he. In 2023, he co-founded Bar Colette, a European-style gastronomic cocktail lounge.
