Japanese ingredients worked through French pâtisserie form the center of this practice. At Pâtisserie Sadaharu Aoki Paris, Sadaharu Aoki is identified with a register that places green tea, Japanese visual restraint, and French dessert structure in the same case, without treating either side as decoration. “Delicious!" When I hear this from people with their mouths full of my pastries and a smile on their face, I would always say: "Good, but I can do even better!" Coming Up
Pastry training in Japan supplied the first technical base: Machida Cooking School is where Sadaharu Aoki studied pastry-making before entering professional production. The early Tokyo post at Patisserie Chandon, held until 1991, placed that training inside a working pastry environment. French technique became the next layer of the work from 1991, when Sadaharu Aoki worked in Paris at Jean Millet's and Pierre Couderc's restaurants. The subsequent post at Frédy Girardet's restaurant in Switzerland added another European kitchen context before the founding of Pâtisserie Sadaharu Aoki Paris in 1998. The later Food Consultant role for Yumeiro Pâtissière manga sits alongside the shop work as a transmission point for pastry knowledge outside the boutique.
The Work Today
The current production at Pâtisserie Sadaharu Aoki Paris keeps Japanese wagashi references and French pâtisserie in direct contact. In Sadaharu Aoki’s work, the point is not novelty for its own sake, but the handling of familiar French formats through Japanese ingredients, clean visual composition, and precise finishing.
Signature
Signature pastries include Thé Vert Napoléon, Chocolate and Salted Butter-Caramel Tart, and macarons.
Peer Recognition
Peer recognition arrived in 2011 with the title of Patissier of the Year. For Sadaharu Aoki, that award marks the standing of a pâtisserie practice built on Japanese ingredients, French technique, and consistent boutique production.
