Scott Kitsmiller is the bar manager at Gus’ Sip & Dip in Chicago’s River North neighborhood, where he helps lead a classic-cocktail program at the Lettuce Entertain You venue. He is a creative force behind the bar programs at Three Dots and a Dash and The Bamboo Room, and part of the team behind Gus’ Sip & Dip’s 2025 recognition from Bon Appétit and VinePair. His profile on the venue site says he moved from performing in Detroit’s nightlife scene into bar work and cocktail innovation before joining Gus’ Sip & Dip after years as bar manager for Three Dots and a Dash and The Bamboo Room.
