Franco Bilbaeno is a San Francisco-based beverage director and mixologist who serves as the Bar Director at Prelude, a contemporary Southern restaurant in The Jay Hotel. Raised in the San Francisco Bay Area, he previously managed the bar program at Michelin-starred Niku Steakhouse and served on the opening bar team at Michelin-starred Angler SF. His beverage career in Northern California also includes bartending roles at Michael Mina and Medjool.
