i. Biography
Franco Bilbaeno is a San Francisco-based beverage director and mixologist who serves as the Bar Director at Prelude, a contemporary Southern restaurant in The Jay Hotel. Raised in the San Francisco Bay Area, he previously managed the bar program at Niku Steakhouse and served on the opening bar team at Angler SF. His beverage career in Northern California also includes bartending roles at Michael Mina and Medjool.
