The Path

Technical training at University of California, Davis set the base for Scott Shirley’s work, before he entered California winemaking through a lab worker role at blending lab in Central Valley, California. He then moved into the enologist position at Opus One in Napa Valley, California, where analysis and cellar precision are part of the job description. Later, he served as winemaker at The Hess Collection in Mount Veeder, California, before becoming winemaker of JUSTIN Vineyards & Winery (since 2012). The progression tracks a shift from lab discipline to broader cellar judgment, with each role adding another layer of fluency in how finished wine gets assembled.

The Work Today

Since 2012, Scott Shirley has led winemaking at JUSTIN Vineyards & Winery in Paso Robles, California, with Bordeaux-style blends and luxury and ultra-premium Cabernet Sauvignon in the United States at the center of the program. He ties that category directly to the appellation: “I think this is the appellation for luxury and ultra-premium Cabernet Sauvignon in the United States.” Harvest starts in the vineyard, not at the blending table. “During Harvest, I spend the mornings walking our vineyard rows to make picking decisions.” The rhythm is practical: assess ripeness, make the call, move the fruit into the cellar with intention. In Shirley’s approach, harvest is a sequence of decisions that shapes what can later be combined, balanced, or held back. Blending is where the work resists single-site certainty. “I never want to restrict our winemaking team to a single plot of earth, betting that it will consistently perform marvelously, regardless of vintage peculiarities.” For Shirley, the blend is not an afterthought; it is the main structure for handling vintage variation with range and judgment.
