The Path
Hospitality finance gave Seth Gerber an early footing in the trade: as a tutor at Boston University (2010–2011), he worked inside the discipline of numbers before moving fully into restaurant operations. That mix of classroom and dining room, spreadsheets and service, set the shape of the rest of his work. At Boston University, hospitality and business sat side by side, and that pairing carried forward into roles where execution mattered as much as analysis. Operations became the next working language at Clio Restaurant (2010–2012), where the job would have depended on timing, coordination, and the daily mechanics that keep service moving. From there, Hillstone Restaurant Group (2012–2013) and Hillstone Restaurant Group (2013–2014) added another layer of management fluency, first as Management Trainee and then as Culinary Manager. The sequence suggests a career built by accumulation: finance, floor operations, and kitchen-side awareness each adding weight to the one before it. That foundation came into sharper focus at Café ArtScience in Boston, first as Assistant General Manager at Café ArtScience in Boston (2014–2015), then as General Manager at Café ArtScience in Boston (2016). The role change inside the same venue marks a familiar path in the trade: learn the room, then be responsible for it. In 2016, he became General Manager at MIDA in Boston (from 2016), and later, from 2018–2020, served as Operations Consultant at Speakeasy Hospitality Group, widening his operational view beyond a single restaurant. Today, Seth is co-owner of MIDA (since 2016) and Adjunct Professor of Boston University (since 2021).
The Work Today
Since 2016, co-ownership has been the clearest expression of Gerber’s work in hospitality. It reads as the sum of the earlier stages rather than a break from them: finance discipline, management training, service operations, and culinary administration all converging in one role. For Seth Gerber, ownership sits on top of the practical base built over years in restaurant systems. Teaching remains part of that same professional structure.
