Shaun Hergatt is an Australian-born chef who worked as executive chef at The Setai in Miami Beach and later became chef-owner of SHO Shaun Hergatt in New York City. His Miami tenure is described by his own bio and by third-party profiles as beginning after earlier roles in Australia, Sydney, and New York, and The Setai is consistently linked to his 2005 Miami appointment. He later returned to New York to open SHO, which earned Michelin recognition, before moving on to later projects including Juni and other chef-owner ventures.
